My original inclination would have been to say Picasso, but I think GF would be tougher there ... maybe not. But Prime gives you easier menu options and a similar view. So .... win!

Nick, Congrats on your 19 year celebration in August. Mrs. Hoops took me to Prime for my birthday and I 2nd what everyone said about it. You cannot go wrong with that selection. However, just a heads up if you do the patio seating check the winds first. We sat inside at a large table by the windows looking at the fountains on a breezy night. The windows had a great deal of mist on them at the end of each show and the 3 Tables on the patio may have requested more towels than drinks that night. Enjoy!!

Cleo at SLS has a separate gluten free menu so a person can order happily. My neighbor LOVES Cleo because of their GF menu. If you order any of their dips, they offer vegetables rather than bread. A MUST is the crispy brussels sprouts (leaves) with almonds and capers. I am addicted to this and usually order 2 of them. Also, I ask for 2 napkins because I am salivating as the brussels sprout leaves arrive. Food is always delicious!

I agree. Cleo was by far the best restaurant we went to during restaurant week. Delicious!

Thanks for this! We've settled on Prime for our anniversary but we're going to be in Vegas for 5 nights so I'm betting we're going to stop in there one of them.

We're also considering Morton's because I got an offer from Landry's Select Club for 2lb lobsters at $39 bucks each.

Agreed. That said, thinking through the menu, I'm not sure GF would necessarily be all that tough there; other than the amuse bouche and dessert (and obviously the bread), I don't think anything on the degustation menu is particularly gluten-y, and Yelp says they even have gluten-free bread. But Prime is fantastic, and if you usually prefer steakhouses, you can't go wrong there.

Good choice. I could eat there everyday. Get extra shishito peppers. I think they give you 3 with the steak but thats not enough.

So the final dinner run down is as follows:

August 16th - Tacos el Gordo
August 17th - Julian Serrano Tapas (Paella!)
    August 18th - Cleo (SLS)
August 19th - Samba (Mirage - the first Vegas Restaurant the wife and I ate at back in 2004. It just announced that it's closing so we thought one last stop was in order)
August 20th - Prime. (Anniversary night)

Of course, I told every restaurant on the reservations that we were celebrating our anniversary which is technically true. Except Tacos el Gordo that is. (obviously)

I had originally wanted to try Sinatra's this trip to try their veal parm and end the debate between them and Carbones. I'll just have to save that for our birthday celebration in October.

REALLY appreciate all of the feedback from everyone. Some of the suggestions that didn't make this trip will definitely make it in October.

Now, I'm off to finish up my pre-Vegas diet because after those meals......

Just saw this so didn't get my opinion in on time but I'll give it anyway, hugos cellar at four queens is our fave. We've been there for 4 of our anniversaries. Vic and anthonys at golden nugget also great.

Never been to Hugo's but just looked it up and it should make a future trip.

Agreed on Vic and Ant's. We have one here in Houston and we visit the one in Lake Charles often.

The crab cakes are something special.

Just remembered another GF friendly new restaurant (opened May 2017) is CHICA at Venetian - Latin American food by Lorena Garcia. This is formerly the DB Brasserie space. Ate there with my GF friend in June. We told the server (Beatriz) we needed Gluten Free. Beatriz knew the menu inside and out and if she wasn't 100% certain, she went to the kitchen and asked the chef. Chica doesn't have a separate GF menu but Cleo does. I highly recommend both Chica and Cleo.
