If you're staying at an MGM resort, can you charge Carbone to your room, or is it an independent vendor?

Depends on how many orders of Spicy Rig you get.

If you get 10 half orders then you can room charge.

Furthermore, if you get less than 10 half orders you can also room charge. It just ends up costing less.

But also will make you less happy.

Generally speaking, you can charge pretty much anywhere to your room, even the more-independent places like Javier's or The Pub. Whether you can get those comped is a separate question that I don't really have answers on.

You can get comps on all of that, although the Pub seems to require a special step for the host since it technically resides in Crystals. But they definitely can comp Javier’s and Pub.

What do I need to order there? It's been a couple years. Spicy rig, meatballs, veal parm...?

Spicy rig for sure. But as a more general note, make sure you confirm the menu before you go; a bunch of stuff isn't back yet. And when I say "confirm", I recommend calling -- at Delmonico, for example, there is a pretty significant delta between what's on the restaurant's own site, and the Venetian site.

It’s that good huh. We’ve never been but would like to try it. Ever have the chicken parm?

The spicy rig is phenomenal. Unfortunately a couple of the things I like (the prosciutto app and the cherry pepper ribs) aren't back on the menu yet, so I haven't been over there lately.

Even if I don't really want a salad I always order the Ceaser salad. The home made garlic croutons are the best part (and better than the garlic bread in the bread basket). The tortellini in brown butter is also good, they are more like small ravioli than a tightly bundled tortellini and are not heavy or chewy. Not sure if it is on menu right now... had it back in August.
