Restaurant Wish List For The Strip

What type of restaurant currently not found on the Strip would you like to see one of the resorts open? A criterion should be that the proposed restaurant should have viable appeal (and therefore a reasonable chance of success):

1. A Vienna-style Cafe/Coffee House: In the mornings, they would serve a wide range of Viennese coffees, paired with a wide variety of tortes (Sachertorte, etc), strudels and other decadent treats. For lunch and later, dishes like a real Wienerschnitzel, Tafelspitz alongside adult coffee drinks.

2. Modern Mexican - Completely apart from street food or Tex-Mex, a place like Broken Spanish in Los Angeles. Dishes with ingredient-focused updates on classics, like lamb neck tamales, oxtail quesadilla, rabbit with cactus, etc. Mezcal drinks would be a focus.

Any thoughts?

 

Yes! Something like Indian Accent in NYC and New Delhi.

For Bayless, a version of Topolobampo might fly in Wynn's new expansion hotel.

 

I don't think any of the Strip burger places do a Minneapolis-style Jucy Lucy (the cheese completely embedded inside the patties).

For bbq, maybe one of the high-end Japanese places could do a small restaurant-within-a-restaurant offering yakinikn at-the-table grilling of prime meats.

 

Well, my waistline is proof of that!

Admittedly, I do like the non-standard things the best (OK, more extreme offal, not so much).

 

Topolobampo just won the James Beard Award for overall Best Restaurant - congratulations to Chef Bayless!
